We've done it multiple times over our 19 Disneyland Paris trips, particularly for Extreme Day Trips and shorter stays.
In fact, travelling with just a backpack can make the whole trip easier:

For shorter trips, we actually prefer it.
Especially for Disneyland Paris.
The quicker you can get out of the airport and on your way to the parks, the better.
We've found hand luggage means:
Less waiting around
Less stress
Less chance of lost luggage
Less carrying things around stations
Lower flight costs
When you're trying to maximise time at Disneyland Paris, every hour matters.
Yes, although it depends on the age of your children.
Now ours are older and we often travel with one child, travelling with hand luggage only is much easier.
When travelling with babies or toddlers, things naturally get more difficult because you're suddenly adding:
Nappies
Wipes
Milk
Snacks
Spare clothes
Pushchair items
It's still possible, but you may need additional bags.
When our children were younger, we also used a pushchair travel bag.
Once we reached the gate and folded the pushchair down, we'd sometimes add lighter items into the pushchair bag such as:
You'll see plenty of families doing similar things while travelling.
Policies can vary between airlines though, so always check current baggage rules before relying on this. We always treated it as a bonus rather than assuming we'd have extra packing space.

You're basically packing:
Phone charger
Power bank
Water bottle
Snacks
Waterproof jacket
Passport
Small essentials
Usually enough space for:
Two outfits
Pyjamas
Toiletries
Chargers
Lightweight jacket
Still manageable if you pack carefully.
Anything longer than this starts becoming a little harder.
Summer trips are far easier with hand luggage only.
T-shirts and shorts take up very little room.
Winter is a completely different story.
Suddenly you're trying to fit:
Jumpers
Coats
Scarves
Gloves
Extra layers
Into exactly the same bag size.
We've definitely found summer trips easier.
Vacuum packing bags genuinely help.
Especially for:
Children's clothes
Hoodies
Jumpers
Pyjamas
You can squeeze far more into a backpack than you'd think.
We've even managed Disneyland Paris with nothing more than under-seat backpacks on shorter trips.
This makes a huge difference.
We usually wear:
Hoodie
Trainers
Jacket
Rather than trying to fit them into the bag.
Airports can be chilly anyway, so you'll probably want them later.
This is probably our biggest recommendation.
Wear shoes you already know are comfortable.
Not brand new Disney trainers.
Not shoes you've bought specifically for the trip.
Disneyland Paris regularly means:
20,000–30,000+ steps per day
Extra shoes take up loads of room in a backpack too.
If possible, we usually avoid packing spare footwear altogether

For shorter trips we normally keep purchases fairly small.

It's quicker, cheaper and far easier than dragging large suitcases around.
Just don't expect to come home with a giant Mickey plush and three pairs of Disney ears without a plan.
